How do I regain the enzymes necessary for digesting beans and bean flours?
Enzymes are not recommended as part of a treatment for celiac disease, nor are they required to digest food products on a gluten-free diet. Healthy bodies, even those with celiac disease, are not deficient in enzyme production. The only requirement to enable normal absorption is to be on a gluten-free diet.
Persons with celiac disease don’t have a problem with digestion; rather it’s absorption that’s impaired. Typically bean flours are very high in fiber and increase gas/abdominal discomfort in individuals, not just someone with celiac disease.
